45% Pinot Noir, 40% Chardonnay, 15% Meunier – all Chamery Premier Cru fruit, grown on south-east facing slopes of calcareous clay, studded with limestone pebbles, and subsoils of sand rich in fossil shells. The fruit was organic, but not quite certified in 2015. Fermentation by indigenous yeasts, then transferred to 4-year old barrels (228L and 400L) for 9 months, where malo occurs and the wines rest on the lees. The wine was then bottled with second fermentation initiated by cultured yeast. Disgorged after 20 months (on 15/07/18) with zero dosage. Zero SO2 at any stage. 12% alc.

This is seriously incredible. So delicate! It's all about finesse and subtlety. Lemons, sea spray, yellow apples, honey blossom, nectarines and white flowers. In the mouth it’s weightless and refined, with perfect balance. No oxidation, just freshness. Very gentle, almost like being brushed with a feather - every component is so effortless and graceful. After a while/with some air, you can really feel the presence of the sandy, sea shell soils in the wine – it’s almost like a delicate wave on the beach, champagne style, washes into your mouth. Some nice buttery croissant notes too, but kept in check by that apple crispness. Acidity is med-high, and lingers as it gets into the crevices. Such a stunning wine. Shy, but full of substance. It's very rare to find organic champagne with zero dosage and zero sulfur, so this is a must for anyone looking for absolute purity and an honest expression from this great region.
