Paul and Willy bought these vines and began organic conversion in 2018. Clay-limestone soil in the commune of Saint-Aubin. However, although it benefits from geological similarities with the village of the 1er Cru Le Ban (dense limestone clay with blue marl subsoil), it faces north, which does not allow it to be classified as a village. Combined with a good altitude, this exposure guarantees a high level of density while maintaining freshness. Vinification in wooden vats in whole bunches for 13 to 16 days with light daily punching down and / or pumping over. Pressed and then aged in old barrels for one year. 20mg/L SO2 before bottling.

Colour of red roses, with lighter edges that are almost violet. Wow, that smells amazing. Very clean with roses, cherries and cherry stones. Deep and sensual core, and elevated at the sides. Burgundy 101 without the suffocation from new oak and sulfur. Incredible aromas, it smells divine. Beautiful texture, and you can feel the extraction – it is borderline chewy, and washes over the mouth. It is not overboard in any way. There is a nice savoury aspect to this wine as well and almost a delicate cherry stone bitterness. The fruit is sweet and savoury at the same time. Slightly earthy, with nice structure. Violets coming though on the nose now, along with exotic spice. Tastes soft and silky, and there are so many layers. This is really opening up so well, and is such a delight. Rose petals, spice, cocoa, and creamy texture. This is really good. Soft acidity, and finishes will with very fine tannins. Very impressive.
