100% Chenin Blanc pét-nat. Grapes are from a small plot in Rablay called La Croix Hardie, made up of red sand, gravel and schist, with a clay vein running through it. The vines are 15-85 years old, and the grapes for this are picked early, coming from the first harvest. Two years in bottle before disgorgement. Zero SO2 at any stage.

Lovely light clear yellow colour. Nose is clean, soft and subtle. Apple, nashi, a little hint of pastry, and little white flowers. Very inviting to smell. To taste it is clean, with small soft bubbles. Flavours of apples, pastry and nashis. Honey drops, salt and flinty minerality. A hint of residual, which is perfectly balanced by the medium acidity. Very fresh, and has a lovely texture about it. It’s quite vinous thanks to the long ageing in bottle, and almost appears as a Champagne rather than a pét-nat. A complex and extremely well-put together sparkling. Very classy.
